The Asteraceae family has many species of flowers that are attractive to honeybees for their pollen or nectar. Only the Fall Aster species produce honey in Minnesota. They usually bloom in October and signal the end of the honeybee season. This year 2024 was the first time I can remember making any honey from the Fall Asters mainly because we had the warmest fall on record and the asters stayed in bloom longer than usual.
The honey tastes tangy with a fruity finish and pairs nicely with an aged cheddar cheese. Quantities are limited of this rare fall honey.
